Real Flight 7.5 seems to be very popular and gets good reviews

Hello Jacob, I use a simulator called "Phoenix". It has proved to be a stable and reliable program.

Yep! Phoenix 5. That was the one you were on at Ferndown and Cashmoor Day. Approx £79.99 or less with free updates.
